Astorre Noti extra virgin olive oil comes from our own olive orchard in Ruppiano, Castelnuovo Berardenga; in the heart of the Chianti Classico region of Tuscany.
Our olives are cultivated with knowledge and respect for the tree and the growing environment. This consideration allows us to produce an oil of unique excellence that reflects the best qualities of its land of origin.
The indigenous Tuscan varieties grown are: Frantoio, Moraiolo, and Leccino, which give the final product the distinctiveness and sophistication of a great Tuscan oil.
The olive harvest takes place from late October to late November depending on the year and ripening times. Olives are exclusively hand-picked, then sent to the press for immediate processing in order to avoid oxidation and to preserve their organoleptic characteristics.
The oil is obtained through extraction with a mechanical press at a cool, controlled temperature. Much care is taken to avoid any contact with oxygen. Then, it is immediately filtered and stored in stainless steel containers to protect it from light and air.
Appearance: clear, with a beautiful green color and golden highlights.
Aroma: intense, rich, with pleasant fragrance of herbs and a certain spiciness.
Palate: full, intense, and powerful, with hints of fresh-cut grass; slightly bitter, and a decidedly spicy finish.
